Egg Hunt Cookies

1 cup butter or butter flavored shortening
1/2 cup brown sugar
1 cup sugar
2 eggs
2 t. vanilla
1 t. salt
1 t. baking soda
2 1/2 cups flour
1 1/2 cups coconut
1/2 cup mini chocolate chips

1 cup green tinted coconut
1 bag M&M's speckled eggs or Cadbury chocolate eggs with candy coating

Cream butter and sugars. Stir in eggs, vanilla, salt and baking soda. Mix in flour, coconut and mini chips. Use an ice cream scoop or your hands to form approx 2 inch balls. Roll balls into green tinted coconut to coat. Bake in 375 degree, preheated oven for 12-14 minutes. As soon as the cookies come out of the oven, gently press 3 chocolate eggs into the top of each. Remove to cool completely. Makes 2 doz.
