Irish Mocha Balls

2 cups crushed shortbread cookies
1/2 c. powdered sugar
1/2 c. powdered Irish coffee creamer
1 c. chopped walnuts
2 Tb. unsweetened cocoa powder
1 t. instant coffee granules (optional)
4-5 Tb. brewed coffee
powdered sugar for rolling

Combine all dry ingredients in mixing bowl, sift together with a wire whisk or fork. Add brewed coffee, one Tb. at a time until mixture is just moistened and sticks together. (The last two times I've made these, I made them way too wet and they were hard to handle, so be careful =o) ) Use your hands to roll a teaspoon of the mixture into a ball. Roll in powdered sugar. Let balls stay out for a few hours to dry a little bit. Roll again in powdered sugar before presenting them, if desired. To give these as a gift, put them in a green coffee cup lined with wax paper and tie on a shamrock gift tag cut out of green decorative paper. You could then wrap the whole thing in cellophane if you need to transport it.
I get about 15 cookies out of this recipe.
